My Dad’s Meatloaf Recipe

Eggless Turkey Meatloaf Recipe

Ingredients

1½ to 2 pounds ground turkey

1 medium sweet red pepper

1 medium carrot

1 small onion

1 clove garlic

1 small tomato

1 slice French or Italian bread

½-cup panko or Italian bread crumbs

Ketchup

Milk

Italian seasoning (oregano, basil, marjoram)

Pepper and salt

Instructions

  1. Dice all vegetables except five or six strips each of the red pepper and onion.
  2. Soften and mash bread in bowl with milk as needed. Break up bread crust by hand if necessary.
  3. Put all ingredients except vegetable strips into large bowl. Add herbs and spices to taste.
  4. Gently blend ingredients in bowl by hand. Add ketchup as needed to moisten. Form into loaf shape.
  5. Roll loaf onto cookie sheet with edges that has been oiled or covered with no-stick foil. Reshape loaf as needed. Glaze entire loaf surface with ketchup. Arrange vegetable strips in alternating pattern atop loaf. Add a bit more ketchup atop vegetable strips.
  6. Bake for about one hour in preheated 350-degree oven. Monitor occasionally to prevent burning of vegetable strips. Gently cover with foil if necessary.
  7. Meatloaf slices may be eaten warm or cold. Add ketchup to taste.
