A Healthier Cinnamon Bun

• 4 cups flour
• 2 heaping tablespoons baking powder
• 1 teaspoon salt
• 1 cup vegetable shortening
• 2 cups mashed cooked sweet potatoes
• 1/2 cup sugar
• 1/4 cup milk

Cinnamon mixture:
1/2 c brown sugar
2 T cinnamon
1/4 t of other spices as desired
1/2 c. water or less
1 apple
3T flour

Mix together the cinnamon mixture recipe in food processor to puree it and set it aside.

Sift together flour, baking powder and salt. Cut in shortening with fork or pastry cutter. Combine warm sweet potatoes and sugar, mixing well. Add milk. Combine sweet potato and flour mixtures. Blend well. Place on floured surface and roll to desired thickness or about 1/4 or 1/8 inch thick. Spread the cinnamon mixture on the dough. Roll the dough up and slice the buns at about 1/2 inch. You can spread more cinnamon mixture on top of each bun. Bake on a lightly greased baking sheet at 400° for 10 minutes, or until nicely browned. The dough mixture can be used to make sweet potato biscuits with out the cinnamon mixture, too.
